Why This Hot Honey Chicken Sandwich Works

There are two common mistakes most people make when making a homemade chicken sandwich recipe. The coating either melts before it reaches the bun or it is too sugary and flat.

This one addresses both issues.

The buttermilk marinade softens the chicken and provides a foundation for the crust to adhere. The double dredge (flour and cornstarch) creates a crispy surface that remains crispy even after glazing. That’s the perfect combination of sweet heat without being overpowering, and that’s the hot honey sauce.

I created this for the first time because I had some hot sauce and a jar of honey that I had been wanting to use. Originally conceived as a weeknight meal. It’s now on a rotation.

Ingredients for a Homemade Hot Honey Chicken Sandwich

For the chicken:

  • 2 boneless, skinless chicken breasts (or thighs for more flavor)
  • 1 cup buttermilk
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • Salt and black pepper

For the crispy coating (double dredge):

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1/2 tsp salt

For the hot honey glaze:

  • 3 tbsp honey
  • 1–2 tsp hot sauce (Frank’s RedHot works well here)
  • 1/4 tsp red pepper flakes
  • Pinch of salt

To build the sandwich:

  • 2 brioche buns, toasted
  • Dill pickles
  • Coleslaw or shredded lettuce
  • Spicy mayo

How to Make a Crispy Hot Honey Chicken Sandwich

Step 1 — Pound, Season, Marinate

Marinate, season, and pound the meat. Meat should be pounded, seasoned, and marinated.

Pound the chicken breasts to an even thickness. The desired range is approximately 3/4″. It is not even and so it cooks unevenly. That’s how dry, rubbery chicken gets — one side is done before the other.

Add garlic powder, smoked paprika, onion powder, salt and pepper to the buttermilk. Submerge the chicken. Cool in the fridge for a minimum of 30 minutes or overnight if possible. The longer it rests, the juicer it gets!

Cook time by thickness:

1/2 inch: cook for 3–4 minutes on each side

3/4 inch: cook 4-5 minutes on each side

2 inches: fry 6–7 minutes on each side

Step 2 — Build the Crispy Coating

In a shallow bowl, mix flour, cornstarch, cayenne, garlic powder, and salt. Cornstarch is required. It restricts gluten development, so that the crust crumbles rather than chews. This is what makes for a crispy fried chicken sandwich versus a mediocre one.

Remove the chicken from buttermilk. Allow to drip, do not shake off all the liquid. The wet coating aids in the dredge’s grip. Stamp each piece down on both sides of the flour mixture. Dip back in buttermilk and dredge again. Two layers. A thicker crunchy coating and improved texture throughout.

Allow coated chicken to rest on a wire rack for 5-10 minutes prior to frying. This will ensure that the coating will not slide off in the oil.

Step 3 — Fry to Golden Brown

Heat oil in a heavy skillet or Dutch oven to 350°F to 375°F (175°C to 190°C). Use a thermometer. The only way to get the burnt outsides and greasy, undercooked insides is to guess.

Fry in batches. Too many in the pan will lower the oil temperature and eliminate the crunch. Two pieces at a time is better than 4 pieces at a time.

Fry until the internal temperature reaches 165°F (74°C) and the food is golden brown. Remove the chicken breast from the oil at 155°F to 160°F and let it rest for the juiciest results. Carry over cooking completes the process. The USDA says it’s safe for whole-muscle cuts and resting for a few minutes at that temperature is safe without changing the texture.

Instead of using paper towels, place the fried chicken on a wire rack. A rack allows steam to vent under. Towels absorb it and melt the crust you’ve just created.

If deep frying isn’t your thing, the same recipe adapts well using an air fryer method — it still gets surprisingly crispy with far less oil

Step 4 — Make the Hot Honey Sauce

Melt the honey a bit to loosen it. Add hot sauce, red pepper flakes and salt. Taste it. Adjust. Add more hot sauce if you are looking for more heat. If you desire that sweet heat to become sweeter, add a little more honey.

As soon as the chicken is out of the oil, brush the glaze over the chicken. Absorbs into the crust quickly and provides a sticky, shiny finish. This is when it all begins to sound like a restaurant.

Step 5 — Assemble the Sandwich

Bake brioche buns until lightly golden on cut side. Spread spicy mayo on each half. Put the glazed chicken on the bottom bun, top with dill pickles, and top with coleslaw or shredded lettuce.

The pickles are not just for show. They penetrated the richness of the glaze and the fat of frying. They make the whole sandwich too heavy without them.

Tips for Extra Crispy Fried Chicken

These small details make the difference between a good crispy chicken sandwich and an actually great one.

  • Cornstarch ratio matters: 1 part cornstarch to 2 parts flour is the sweet spot. More cornstarch means more shatter.
  • Cold chicken fries better. Take it straight from the marinade to the dredge without warming up first.
  • Oil recovery time: between batches, give the oil 2–3 minutes to climb back to temperature. Consistent heat is what keeps it actually crispy.
  • Salt after frying: a small pinch of flaky salt on the hot chicken before the glaze sharpens every flavor underneath it.

Air Fryer Hot Honey Chicken Sandwich Option

Preheat the air fryer to 400°F (200°C). Marinate the chicken in buttermilk (twice dredged). Spray generously with oil on both sides. Cook for 12-15 minutes, turning once halfway through. Brush on the hot honey glaze during the last 2 minutes.

Not the same as deep fried. But truly crunchy, easier to clean up and much less oily. The perfect quick and easy dinner idea for any day of the week.

Baked and Grilled Variations

Baked: Preheat oven to 425°F (220°C). Place dredged chicken on a wire rack over a sheet pan. Bake 20–25 minutes, flipping once. Glaze in the last 5 minutes.

Grilled hot honey chicken sandwich: Heat the grill to medium-high, around 375°F (190°C). Grill 5–6 minutes per side. Brush the hot honey glaze on during the final minute so it caramelizes over the grill marks without burning. The smokiness adds something the other methods don’t.

Food Safety Tips

  • Use a thermometer every time. Color is not reliable.
  • Pull chicken at 155°F–160°F and rest it. Carryover heat reaches the safe 165°F without drying out the meat.
  • Never reuse marinade that touched raw chicken without boiling it first.
  • Store cooked chicken within 2 hours. Refrigerate and consume within 3–4 days, per FDA food safety handling guidelines.
  • Reuse frying oil no more than 2–3 times. Degraded oil affects both flavor and safety.

Method
