Ingredients
  

  • pounds chicken breast or chicken thighs sliced
  • ¼ cup low sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or brown sugar
  • 2 garlic cloves minced
  • 1 teaspoon fresh ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 cups mixed stir fry vegetables
  • 1 tablespoon cooking oil

Method
 

  1. Slice chicken into even pieces and season lightly.
  2. Mix soy sauce, sesame oil, rice vinegar, honey, garlic, ginger, and cornstarch slurry.
  3. Heat oil in a pan and cook chicken until golden and reaches 165°F.
  4. Add vegetables and cook until slightly crisp.
  5. Pour in sauce and stir until thickened.
  6. Serve with rice, noodles, or vegetables.
