Easy Chicken Fried Rice Recipe

Ingredients
  

  • 2 cups cold cooked long-grain white rice
  • 1 large boneless skinless chicken breast
  • 2 large eggs
  • 1 cup frozen peas and carrots
  • 2 green onions
  • 2 garlic cloves
  • 1/2 small onion
  • 2 tablespoons neutral cooking oil
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon toasted sesame oil
  • 1/4 teaspoon black pepper

Method
 

  1. Cut chicken into small, even pieces.
  2. Heat 1 tablespoon oil in a large skillet over medium-high heat.
  3. Cook chicken for 5 to 7 minutes, until it reaches 165°F (74°C). Remove from skillet.
  4. Add remaining oil and scramble eggs until just cooked. Remove.
  5. Cook onion, peas, carrots, and garlic for 2 to 3 minutes.
  6. Add cold rice and break apart any clumps.
  7. Stir-fry rice for about 4 minutes.
  8. Return chicken and eggs to the skillet.
  9. Add soy sauce, sesame oil, and black pepper.
  10. Toss for 2 minutes and finish with green onions.

Notes

  • Cold cooked rice gives the best texture. For extra vegetables, add bell pepper, mushrooms, broccoli, or cabbage. Nutrition values vary according to the specific ingredients and serving sizes.
