Ingredients
  

  • 2 cups cooked shredded chicken
  • 1 cup frozen peas and carrots
  • 1/3 cup butter
  • 1/3 cup flour
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 diced small onion
  • Salt and pepper
  • 2 pie crusts homemade or store-bought

Equipment

  • Large skillet
  •  9-inch pie dish
  • whisk

Method
 

  1. Melt butter in a skillet, add onion, and cook until softened.
  2. Stir in flour to make a roux; cook briefly until lightly toasted.
  3. Gradually whisk in chicken broth and milk until the sauce thickens.
  4. Add chicken, peas, and carrots. Season with salt and pepper.
  5. Fill the pie crust, cover with the second crust, seal edges, and cut vents.
  6. Bake at 400°F for 35–40 minutes until golden and bubbling.

Notes

 Let the pie rest 10 minutes before slicing so the filling sets properly
