Slow Cook Chicken Breast: The Easiest Way to Get Tender, Juicy Results Every Time

Ingredients
  

  • 2 lbs about 4 pieces boneless skinless chicken breasts
  • 1/2 cup low-sodium chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Optional: 1 tsp Italian seasoning

Equipment

  • Slow cooker (4 to 6 quart)
  • Meat thermometer
  • two forks for shredding

Method
 

  1. Mix all dry spices and rub evenly over each chicken breast.
  2. Place seasoned chicken in a single layer in the slow cooker. Pour broth over the top.
  3. Cook on LOW for 6 to 7 hours or HIGH for 3 to 3.5 hours. Do not open the lid.
  4. Check internal temperature. It must read 165°F / 74°C.
  5. Remove and let rest for 5 to 10 minutes.
  6. Shred with two forks or slice against the grain. Spoon cooking liquid back over for extra moisture.

Notes

  • Frozen chicken: cook on HIGH only if needed, verify temperature carefully
  • Liquid alternatives: salsa, coconut milk, or diced tomatoes all work well
  • Storage: refrigerate up to 4 days, freeze up to 3 months
  • Flavor boost: add a bay leaf or squeeze of lemon before cooking
  • For uneven thickness: lightly pound thicker breasts for more even cooking
