Slow Cooker Mexican Chicken That Saves My Busy Weeknights

A deeply seasoned, easy shredded Mexican chicken made entirely in the slow cooker. Perfect for tacos, rice bowls, burritos, or meal prep. Uses simple pantry spices and salsa for bold, authentic flavor with minimal effor

Ingredients
  

  • 2 lbs 900g boneless skinless chicken breasts or thighs
  • 1 cup 240ml salsa (jarred or homemade)
  • 1 can 15 oz / 425g black beans, drained and rinsed
  • 1 cup 160g frozen or canned corn
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1 lime
  • Optional: 1/2 cup 120ml low-sodium chicken broth

Equipment

  • 6-quart slow cooker / crockpot
  • Two forks or a hand mixer (for shredding)
  • Meat thermometer

Method
 

  1. Pat chicken dry. Season both sides thoroughly with cumin, chili powder, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  2. Place seasoned chicken in the bottom of the slow cooker in a single layer.
  3. Pour salsa evenly over the chicken. Add black beans and corn around the sides. Squeeze lime juice over everything.
  4. Add optional broth only if the mixture looks very dry.
  5. Cover and cook on LOW for 6 to 8 hours, or HIGH for 3 to 4 hours.
  6. Check internal temperature — it must reach 165°F (74°C).
  7. Shred chicken using two forks directly in the slow cooker. Stir to combine with all the juices.
  8. Let rest 5 minutes before serving.
  9. Serve in tacos, rice bowls, burritos, or quesadillas.

Notes

  • For crispier edges (great for tacos): spread shredded chicken on a baking sheet or in an air fryer basket at 400°F for 5–7 minutes after slow cooking.
  • Thighs stay juicier than breasts, especially at the longer cook time end.
  • Freezes well in airtight containers for up to 3 months.
  • Do not cook from frozen — always thaw chicken fully before slow cooking.
  • Salsa variety changes the flavor significantly. A smoky or chipotle salsa adds extra depth.
  • Leftovers keep well in the fridge for up to 4 days.
